
Lion’s Mane Skagenröra (Swedish “Shrimp” Salad)

Cold Bay shrimp salad is a classic topping for Swedish street food (and hot dogs), but there is a wonderful alternative in using Lion’s Mane mushrooms that suits all preferences! Lion’s Mane mushroom is a powerful mushroom that mimics the sweet flavor of shrimp and has a similar texture to shellfish.
Serves 6-8
INGREDIENTS
1 pound Lion’s Mane mushrooms
2-3 tablespoons of butter
1 cup full fat Greek yogurt or crème fraîche
1 cup mayonnaise
¼ cup dill, finely chopped
1.5 tablespoons shallot, finely chopped
1 lemon
Salt
PREPARATION
- Shred the Lion’s Mane into small pieces. Sauté Lion’s Mane mushrooms in butter and sea salt for 3-4 minutes, set aside to cool.
- While mushrooms are cooling, prepare base for salad.
- Mix full fat Greek yogurt or crème fraîche with mayonnaise (vegan alternatives work well here).
- Add in finely chopped dill, finely chopped shallot, and the juice and zest of one lemon.
- Add salt to taste and mix well.
- Gently fold some of the base into the mushrooms, only using enough to coat the mushroom mixture well.
- Serve warm or chilled on top of your Swedish hot dog or toast, etc.
- To assemble the Swedish hot dog: Add a portion of cheesy mashed potatoes, the hot dog, the Lion’s Mane mushroom salad, ketchup, mustard, pickles, and fried shallots.
