This recipe was demonstrated at the Foodwise Classroom on August 13, 2022.
1 lb ground lamb (medium fattiness)
½ cup long grain rice
½ cup fine bulgar
1 small yellow onion
3 tbsp chopped parsley
2-3 cloves garlic, minced
16 oz organic blended heirloom tomatoes
Salt and pepper to taste
Assortment of tomatoes, peppers, and squash, cored and hollowed for stuffing
To make filling: knead together lamb, rice, bulgar, onion, parsley, garlic, salt, and pepper with 1 cup blended tomatoes. Reserve 1 cup of blended tomatoes to side.
Add mixture into vegetables and/or grape leaves.
Pour remainder of blended tomatoes (1 cup) over stuffed vegetables and grape leaves.
Cover with foil and bake at 400 degrees F for 1 hour.
Serve warm as main dish. Pair with sliced vegetables or salad with vinaigrette.
