Hog Island’s Hogwash

Makes about 1 cup (240 milliliters), enough for at least 24 oysters
INGREDIENTS
¼ cup (60 milliliters) seasoned rice vinegar
¼ cup (60 milliliters) unseasoned rice vinegar
1 large shallot, peeled and minced
1 large jalapeño chile, seeded and minced
½ bunch fresh cilantro, finely chopped
Juice of 1 lime
PREPARATION
In a small nonreactive bowl, combine the vinegars, shallot, jalapeño, cilantro, and lime juice and stir until combined. Serve at once.
If making ahead, mix dry ingredients and refrigerate for up to 3 days. Stir in the vinegars and lime juice just before serving.
