Fresh Goat Cheese & Fava Bean Dumplings, Spring Garlic, Meyer Lemon & Aged Goat Cheese

Makes 6 dumplings (enough for 2 to share as an appetizer)


Dumpling Filling
6 ounces Tomales Farmstead Creamery Liwa cheese
6 ounces shucked, blanched, and peeled fava beans, chopped roughly
2 tablespoons grated Tomales Farmstead Creamery Assa cheese
1 egg yolk, lightly beaten
Pinch of salt

6 Asian dumpling wrappers (siu gow or similar round wrappers)

4 tablespoons butter
2 tablespoons very thinly sliced spring garlic (greens as well as whites)
½ teaspoon fresh thyme
2 teaspoons Meyer lemon juice
2 tablespoons shucked, blanched, and peeled fava beans
Shaved Tomales Farmstead Assa cheese, for garnishing


To make the dumpling filling: In a bowl, combine both cheeses, chopped fava beans, egg yolk, and salt.

To make the dumplings: Place 1 teaspoon of dumpling filling in the center of a dumpling wrapper. Apply water to the edges of the wrapper. Gently lift one side of the wrapper up and fold it over the filling to form a semi-circle. Fold the semi-circle wrapper into a tortellini shape. Place the dumplings in the refrigerator on a floured surface until ready to cook. If you aren’t going to cook them soon, cover the dumplings with a damp cloth or with plastic wrap.

To cook the dumplings: Bring a large pot of lightly salted water to a boil and gently add the dumplings to it. Cook for about 3-4 minutes, or until they float, then remove them from the water and set aside in a bowl.

In a medium sauté pan, add 2 tablespoons of the butter and warm it over low heat; do not let it brown. Add the spring garlic to the pan and sauté briefly. Once the garlic begins to color, turn off the heat and add the thyme and lemon juice. Add the remaining butter to help stop further cooking. Gently toss in the shucked fava beans and cooked dumplings and add salt to taste.

To serve: Place the dumpling fava mixture in a warm serving bowl and garnish it with shaved Assa cheese.
