English Peas, Edamame Style

This recipe was featured in CUESA’s Farmers Market Box on April 18, 2020. Based on the Japanese fresh soybean preparation, this is a great snack for a warm weekend shared or enjoyed alone.
INGREDIENTS
Whole peapods
Water
Flaky sea salt
PREPARATION
Pick out the largest, fattest pea pods and wash them in cold water. Bring a medium size pot of water to boil, liberally salted. Have bowl of ice water ready.
After water is boiling, drop in the pea pods and cook for 45 seconds to a minute. Drain and plunge them in ice water. Drain and dry on a towel. Place peapods in bowl and sprinkle with flaky sea salt. Shuck and enjoy just as you would edamame beans.
