This recipe was demonstrated at the Foodwise Classroom on August 26, 2023.
3 ounces rice noodles, 1/4 inch wide
1 cup green cabbage, thinly sliced
1 scallion, roughly chopped
2 tablespoons vegetable oil
1 tablespoon roasted peanuts, crushed
1 (8 ounce) package Hodo Miso Tofu
1 teaspoon cornstarch
1 teaspoon soy sauce
1 teaspoon maple syrup
2 tablespoon peanut sauce (see recipe below)
Cook the noodles according to the package instructions.
Prepare the cabbage and scallion. Microwave the chopped scallions with 1 tbsp of oil for 10 seconds. Crush the roasted peanuts in a mortar and pestle.
Shred the tofu with a cheese grater. Heat up a nonstick pan with one tablespoon of oil. Add the shredded tofu, cornstarch, soy sauce, and maple syrup to the pan. Cook until crispy, about 5 minutes.
Assemble this dish with noodles, green cabbage, and miso tofu. Garnish with scallion oil and crushed peanuts. Add a drizzle of peanut sauce to finish.
NOTE: Hodo’s Organic Miso Tofu has a limited distribution, but is available in retailers Safeway (Northern California) and Mom’s Organic Market (Mid-Atlantic). If the Organic Miso Tofu is not available in your area, feel free to use Hodo’s other tofu products for this recipe like their extra firm tofu or braised tofu.
Refrigerate leftover shredded tofu in an airtight container for up to 3 days. It is best to prepare the noodles the day of consumption.
½ cup creamy peanut butter
¼ cup hoisin sauce
1 tablespoon vegan chicken bouillon paste
1 cup water
1 garlic, minced
1 tablespoon chili garlic soy sauce
Combine the peanut sauce ingredients in a large bowl and mix well.
Heat up a saucepan and add the ingredients. Allow it to simmer for a few minutes.
Turn the heat off and allow it to cool. The heat might make it watery but once the peanut sauce is cooled, the consistency will become slightly thicker.
Alternatively, you can add the peanut sauce ingredients in a microwave-safe bowl and microwave for 1 minute at a time and up to 2 1/2 minutes. Keep stirring after 1 minute until you reach the desired consistency.
