Oven-Roasted Chicken & Sweet Potato Mash

Serves 4

INGREDIENTS

For chicken:
2 pounds of chicken thighs (4 pieces)
2 tablespoons Cajun seasoning
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon ground black pepper
2 tablespoons Italian herb blend OR ½ tbsp fresh rosemary, ½ tbsp fresh thyme, ½ tbsp fresh oregano or other herbs available
2 tablespoons olive oil

For sweet potato mash:
5-6 small sweet potatoes, peeled, diced in large chunks
½ stick unsalted butter
½ cup heavy cream
1 teaspoon vanilla extract
3 tablespoon brown sugar

PREPARATION

Preheat oven to 375 F.

Season the chicken by rubbing in all of the seasonings and herbs with the olive oil.

Place chicken in large pan and cover with foil. Let bake for 45 mins. Uncover the chicken & turn temperature up to 400 F and let it cook another 20 mins or until skin is crispy and brown.

While the chicken cooks, prepare sweet potato mash.

Add sweet potato chunks to large pot. Cover with water and boil on medium-high heat for 20 minutes until potatoes are soft/fork tender.

Once soft, drain water, add butter, heavy cream & mash together.

Once potatoes form a creamy consistency, add brown sugar and vanilla extract. Mix and adjust flavoring as needed.

Once everything is finished, plate with rice, the chicken thigh along with its gravy fixings, sweet potato mash, and any seasonal roasted veggies as desired. Enjoy!
