Onion Jam

Makes 1½ cups
INGREDIENTS
6 small onions
¼ cup brown sugar
¼ cup white wine vinegar
½ tsp salt
1 tablespoon olive oil
3 sprigs thyme
½ cup of water
PREPARATION
- Peel onions and cut lengthwise into thin strips.
- Heat olive oil in a skillet over medium heat. Add onions and saute, stirring frequently, until golden brown and nearly caramelized. Stir in salt and thyme sprigs. Add water to pan to deglaze.
- Cook for another 5-10 minutes or until onions are caramelized. Add sugar and vinegar and stir well to combine.
- Cook for another 5 minutes or until mixture is thickened and slightly sticky. Place in jars, cool completely, and refrigerate.
