Onion Jam

Makes 1½ cups

INGREDIENTS

6 small onions
¼ cup brown sugar
¼ cup white wine vinegar
½ tsp salt
1 tablespoon olive oil
3 sprigs thyme
½ cup of water

PREPARATION

  1. Peel onions and cut lengthwise into thin strips.
  2. Heat olive oil in a skillet over medium heat. Add onions and saute, stirring frequently, until golden brown and nearly caramelized. Stir in salt and thyme sprigs. Add water to pan to deglaze.
  3. Cook for another 5-10 minutes or until onions are caramelized. Add sugar and vinegar and stir well to combine.
  4. Cook for another 5 minutes or until mixture is thickened and slightly sticky. Place in jars, cool completely, and refrigerate.
