Old Dog Ranch Walnut Cherry Granola

This recipe was demonstrated for CUESA’s Market to Table program on April 23, 2016. Mollie and Michelle prefer to use all organic ingredients and certified gluten-free oats.

Makes about 9 cups

INGREDIENTS

¼ cup Old Dog Ranch Just Walnut Butter
1 cup maple syrup
1 teaspoon ground cardamom
1 teaspoon cinnamon
2 teaspoons sea salt
½ teaspoon ground nutmeg
⅛ teaspoon freshly ground black pepper
1 cup Old Dog Ranch walnuts
2 quarts rolled oats
1 cup chopped dried cherries

PREPARATION

Preheat the oven to 225°F. In a large bowl with a spatula, mix together the walnut butter and maple syrup for 1 to 2 minutes, or until they are thoroughly combined but before the oil  separates from the syrup. Add the spices and salt, and mix again. Fold in the walnuts and the oats into the mixture with your hands, making sure they are coated consistently. Divide the mixture between two half sheet pans, spreading it out evenly, and bake for 35 minutes. Check to make sure there is no moisture left, and bake longer if needed, being careful not to burn the walnuts. Allow the granola to cool completely before stirring in the cherries. Store in an airtight container. Serve with your favorite milk, yogurt, or ice cream.
