Evolution Hot Sauce Breakfast

Serves 2

INGREDIENTS

1 tablespoon olive oil or butter
1 medium onion, diced
1 cup cabbage, shredded
½ cup mushrooms, sliced
2 medium tomatoes, diced
2 to 3 tablespoons of your favorite Evolution Hot Sauce flavors
6 eggs

PREPARATION

  1. Heat olive oil in a large skillet over medium heat. Add diced onions and sauté until softened and slightly caramelized (about 4 to 5 minutes).
  2. Stir in shredded cabbage and sliced mushrooms. Cook until cabbage wilts and mushrooms become tender, about 5 minutes.
  3. Add the diced tomatoes and cook for another 2 to 3 minutes until they soften.
  4. Add Evolution Hot Sauce flavor(s) of choice. Let the mixture simmer for 5 to 6 minutes more, allowing the flavors to meld. Remove from heat.
  5. In the meantime, whisk the eggs in a bowl.
  6. Add butter or oil to a medium pan.
  7. Add half the eggs and spread across the pan, creating a thin layer. Cook for 2 to 3 minutes, spreading eggs gently. Remove from heat when you’ve reached the desired texture. Roll the egg into itself like a crepe. Repeat with the remaining half of the eggs.
  8. Put egg “crepe” on a plate and serve together with sautéed veggies or on the side.
