
Evolution Hot Sauce Breakfast

INGREDIENTS
1 tablespoon olive oil or butter
1 medium onion, diced
1 cup cabbage, shredded
½ cup mushrooms, sliced
2 medium tomatoes, diced
2 to 3 tablespoons of your favorite Evolution Hot Sauce flavors
6 eggs
PREPARATION
- Heat olive oil in a large skillet over medium heat. Add diced onions and sauté until softened and slightly caramelized (about 4 to 5 minutes).
- Stir in shredded cabbage and sliced mushrooms. Cook until cabbage wilts and mushrooms become tender, about 5 minutes.
- Add the diced tomatoes and cook for another 2 to 3 minutes until they soften.
- Add Evolution Hot Sauce flavor(s) of choice. Let the mixture simmer for 5 to 6 minutes more, allowing the flavors to meld. Remove from heat.
- In the meantime, whisk the eggs in a bowl.
- Add butter or oil to a medium pan.
- Add half the eggs and spread across the pan, creating a thin layer. Cook for 2 to 3 minutes, spreading eggs gently. Remove from heat when you’ve reached the desired texture. Roll the egg into itself like a crepe. Repeat with the remaining half of the eggs.
- Put egg “crepe” on a plate and serve together with sautéed veggies or on the side.
