Berry Hoe Cakes

Serves 4 to 6

These hoe cakes feature our favorite seasonal ingredient, berries, and make a great addition to your brunch spread.

INGREDIENTS
2 cups mixed berries
1 cup fine cornmeal
1 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

PREPARATION

  1. In a medium mixing bowl whisk together cornmeal, flour, baking soda and powder, and salt. Set aside.
  2. In a larger mixing bowl whisk together eggs, sugar, buttermilk and melted butter. Mix together the dry ingredients with the wet ingredients, a little at a time, until just incorporated and there are no streaks of flour in the batter. Let sit for 5 minutes before frying.
  3. Heat griddle to medium-low and grease with vegetable oil. Spoon about ¼ cup batter per cake onto the hot griddle. When the cake is about halfway cooked, (there will be bubbles forming on the top and the edges will look dry), place berries into the cake. Don’t overload the cakes with the berries or they will not cook properly.
  4. Flip the cake over and finish cooking. Stack your cakes high and serve with extra berries and maple syrup.
