Maria, born and raised in the Central Coast, developed a passion for the kitchen at a young age, cherishing the moments spent with her family in that warm and welcoming space. After graduating from Le Cordon Bleu in 2012 and adopting a Plant Based Lifestyle in 2015, Maria embarked on her entrepreneurial journey with the opening of Flower of Love in 2017, followed by Cali Dawg in 2019, which gained recognition for its award-winning vegan hot dog. While her business ventures are currently on hold due to motherhood, Maria recently joined Green Thumb Farms in 2021, collaborating with her partner Rudy to create a formidable team. Together, their vision includes opening a small shop where Maria can continue to showcase her culinary creations, while also imparting food justice classes to youth and promoting healthy eating habits through vegetable-based dishes. Their ultimate goal is to secure land for long-term sustainability and community engagement. Serves 4-6

4 zucchini grated
1 onion (yellow or white)
½ cup garbanzo flour
½ cup oil of choice
1 teaspoon salt
¼ teaspoon pepper
¼ teaspoon cayenne
2 garlic cloves

Cilantro Avocado Sauce:
½ bunch cilantro
1 avocado
½ vegan or other mayo
1 lemon
1 teaspoon salt

Grate zucchinis and onions, add salt and pepper and let rest for 10 minutes. Use a colander and squeeze the grated mixture. We want to squeeze out as much liquid as possible.

Add garbanzo flour, paprika, minced garlic and any salt if needed.

In a pan add 2 tbsp of oil until hot, with a spoon scoop out zucchini mixture and create round cakes into the oil (kind of like pancakes). Wait until one side is brown to flip.

Continue to add batter into oil until finished. Add oil as needed.

Add sauce ingredients in a blender and blend.

Enjoy zucchini cakes with sauce. Personally I like to eat it in a taco or accompanied with a side of rice or quinoa.
