Zucchini Cakes with a Cilantro Avocado Sauce

Serves 4-6

INGREDIENTS
4 zucchini grated
1 onion (yellow or white)
½ cup garbanzo flour
½ cup oil of choice
1 teaspoon salt
¼ teaspoon pepper
¼ teaspoon cayenne
2 garlic cloves

Cilantro Avocado Sauce:
½ bunch cilantro
1 avocado
½ vegan or other mayo
1 lemon
1 teaspoon salt

PREPARATION

Grate zucchinis and onions, add salt and pepper and let rest for 10 minutes. Use a colander and squeeze the grated mixture. We want to squeeze out as much liquid as possible.

Add garbanzo flour, paprika, minced garlic and any salt if needed.

In a pan add 2 tbsp of oil until hot, with a spoon scoop out zucchini mixture and create round cakes into the oil (kind of like pancakes). Wait until one side is brown to flip.

Continue to add batter into oil until finished. Add oil as needed.

Add sauce ingredients in a blender and blend.

Enjoy zucchini cakes with sauce. Personally I like to eat it in a taco or accompanied with a side of rice or quinoa.
