Vegan Berry Crumble

Serves 4

INGREDIENTS

Berry Filling
4 cups mixed berries (fresh or frozen)
Zest of 1 lemon
1/2 cup sugar
3 tablespoons cornstarch

Crumble
3 cups all-purpose flour
1 cup white sugar
1 teaspoon baking powder
1/4 teaspoon salt
Pinch of cinnamon
1 cup vegan butter (cold, cut into cubes)
1 flax egg (1 tablespoon flaxseed meal and 3 tablespoons water)

PREPARATION

  1. Preheat oven to 375°F (190°C).
  2. Prepare the flax egg and let it sit for 5 minutes.
  3. In a bowl, combine flour, sugar, baking powder, salt, and cinnamon.
  4. Cut in the vegan butter until the mixture is crumbly. Mix in the flax egg.
  5. In a separate bowl, toss berries with lemon zest, sugar, and cornstarch.
  6. Spread the berry mixture in a baking dish. Top evenly with the crumble mixture.
  7. Bake for 45 minutes or until golden brown and bubbly.
  8. Let cool slightly before serving. Enjoy!
