This recipe showcases locally grown tomatoes as a part of Foodwise’s Seasonal Spotlight program, which shines a light on the best produce that California farms have to offer at our farmers markets. This recipe reminds us that tomatoes are technically a fruit, and when paired with their summer-time market friends, stone fruits, they make a delicious sweet and savory salsa! Perfect on grilled chicken or fish, or scooped generously with your favorite chip.

Serves 6

INGREDIENTS

3 cups diced ripe tomatoes
1 cup diced stone fruit
½ cup red bell pepper
½ cup red onion
1 chili (jalapeño, serrano, or shishito)
¼ cup chopped cilantro
2 tablespoons lemon or lime juice
1 tablespoon olive oil
Salt and pepper to taste

PREPARATION

  1. Dice tomatoes, stone fruit, bell pepper, and onion.
  2. Mince the chili pepper. If you prefer a milder heat, remove the seeds first.
  3. Mix all the ingredients in a bowl.
  4. Chill in the refrigerator for 15 minutes for the flavors to develop.
