Tomato Toast with Yuzu Mayo and Furikake

Celebrate juicy summer tomatoes with this easy tomato toast, featuring bright yuzu mayo, savory furikake, and crusty toasted bread. A farmers market favorite meets bold Japanese flavors. Look for yuzu kosho and furikake at Asian or specialty grocery stores or source online.

INGREDIENTS
Toast
4 thick slices of crusty bread
2 medium-sized heirloom tomatoes
2 tablespoons furikake
Olive oil and salt for drizzling
Yuzu Mayo
¾ cup mayonnaise
2 tablespoons yuzu juice
1-2 teaspoons yuzu kosho, to taste
1 small garlic clove, grated
PREPARATION
- Preheat the oven to 400°F.
- Mix the yuzu mayo ingredients in a small bowl. Start with 1 teaspoon yuzu kosho and add more to taste. Yuzu kosho varies in saltiness and heat, so adjust according to your preference.
- Place bread slices on a baking sheet, drizzle with olive oil on both sides, and sprinkle with a pinch of salt. Toast in the preheated oven until lightly toasted, about 5-7 minutes.
- While bread is toasting, slice tomatoes into thick slices.
- Let the toast cool slightly before spreading each slice with a tablespoon of yuzu mayo. Top with the tomato slices and sprinkle with furikake.
- The recipe will make extra yuzu mayo. Save it for the next batch of tomato toast or use it as a delicious dip for fries or tempura!
