Summer Veggie Sauté

Serves 4


1 tablespoon olive oil
1 onion, diced
3 cloves garlic, minced
1 pound zucchini, cubed
½ pound tomatoes, diced
½ pound peppers, diced
Salt and pepper to taste
Crushed red chili flakes (optional)
1 cup basil leaves, chopped (optional)


Heat olive oil in a pan. Add onions and garlic and cook until fragrant. Add zucchini to the pan and continue to sauté until soft. Add tomatoes and peppers and cook for a few more minutes. Season with salt and pepper to taste. Remove from heat and stir in basil.
