
Strawberry Vinaigrette

Serves 10 to 12
INGREDIENTS
2/3 cup roughly chopped strawberries, green tops removed
1/4 cup white balsamic vinegar
2 tablespoons lemon juice
1/3 cup fruity olive oil
1 tablespoon honey
1/2 teaspoon salt
1/2 teaspoon freshly cracked pepper
PREPARATION
- Place strawberries in a bowl and mash the berries.
- Add all other ingredients into a jar with a good fitting lid.
- Add the strawberries to the jar.
- Shake vigorously to mix all the ingredients well.
- Let the vinaigrette sit in the fridge for 15 or so to allow the flavors to mingle.
- Shake again before serving.
