Strawberry Vinaigrette

Serves 10 to 12

INGREDIENTS

2/3 cup roughly chopped strawberries, green tops removed
1/4 cup white balsamic vinegar
2 tablespoons lemon juice
1/3 cup fruity olive oil
1 tablespoon honey
1/2 teaspoon salt
1/2 teaspoon freshly cracked pepper

PREPARATION

  1. Place strawberries in a bowl and mash the berries.
  2. Add all other ingredients into a jar with a good fitting lid.
  3. Add the strawberries to the jar.
  4. Shake vigorously to mix all the ingredients well.
  5. Let the vinaigrette sit in the fridge for 15 or so to allow the flavors to mingle.
  6. Shake again before serving.
