Shira-ae with Local Green Beans

Serves 4
INGREDIENTS
8 ounces local green beans, cleaned
5 ounces medium firm Hodo soy tofu, chopped
1 ounces soy sauce
Garnish: chives, mint, shiso
Shira-ae
4 tablespoons golden sesame seeds, toasted
1 tablespoon sugar
1 tablespoon Shiro miso
1 teaspoon salt
1 teaspoon lemon juice
2 tablespoons water or dashi
1 tablespoon sesame oil
PREPARATION
Shira-ae Method
- Using a mortar and pestle, grind sesame seeds until relatively fine.
- To the side, mix in sugar, salt, miso, water (or dashi), and lemon juice.
- Incorporate into the mortar and pestle with the ground sesame seeds. Once fully mixed, add sesame oil.
- Add the chopped tofu, in small phases, making a chunky mix of tofu and sesame dressing.
Green Bean Method
- Blanch in boiling salted water until perfectly cooked, about 1 minute. Shock in ice water.
- Dry well. Toss in soy sauce.
- Mix green beans with Shira-ae until completely covered.
- Garnish with chives, mint, or shiso.
