Fresh Mozzarella and Watermelon Skewers with Lemon, Honey, and Mint Drizzle

Serves 4
INGREDIENTS
1 small seedless watermelon, cut into cubes and chilled
8 ounces Pt. Reyes Farmstead Cheese Company fresh mozzarella, drained and cut into cubes
2 tablespoons honey
2½ tablespoons fresh squeezed lemon juice
2 tablespoons chopped fresh mint leaves, plus more for sprinkling
Pinch of salt
Pinch of crushed red pepper flakes
PREPARATION
1. Thread the watermelon and mozzarella onto skewers.
2. Separately, in a small bowl, combine the remaining ingredients with a whisk to make the dressing. Drizzle the dressing over skewers. Sprinkle with additional chopped mint.
3. Serve chilled. This also makes a great salad. Simply chop the watermelon and mozzarella to 1-inch cubes and toss in the dressing.
