Encocado de Pescado del Pacifico (Coconut Fish from the Colombian Pacific)

This dish is from the Colombian Pacific Coast where my roots are from and can usually be found at the biggest Black Latino Fest in Cali, Colombia (El Festival de Música del Pacífico Petronio Álvarez) that takes place every August.

This recipe was demonstrated at the Foodwise Classroom on September 23, 2023.

Serves 4

INGREDIENTS

Oil
1 red bell pepper, diced small
1 medium yellow onion, diced small
1 bunch green onion, finely chopped
3 garlic cloves, minced
1 teaspoon achiote powder
1 1/2 cans (20 ounces) coconut milk
1 teaspoon cinnamon powder
1 teaspoon ginger, finely minced
2 1/2 pounds red snapper
Salt and pepper to taste
1 tablespoon dried oregano
1 cilantro bunch, chopped
Green plantain chips

PREPARATION

Heat large pan with oil over medium heat and add red pepper, yellow onion, green onion, garlic, achiote and sauté until vegetables soften and onions turn translucent.

Add in coconut milk along with cinnamon and ginger and stir and continue to let simmer.

Season fish with salt and pepper and add to coconut milk sauce. Let fish simmer in sauce for 5 minutes until it starts to flake.

When cooked, remove from heat.

Top with chopped cilantro and serve green plantain chips.
