Coconut Curry Tofu with Greens

Serves 2-4

INGREDIENTS

2 tablespoons olive oil
1 medium onion, diced
2-4 cloves garlic, minced
Salt and pepper to taste
1.5 pounds preferred leafy green such a spinach or kale, washed, de-stemmed (if needed)
1 (8 ounce) package Hodo Indian Spiced Tofu
1 can coconut milk
2 tablespoons maple syrup

PREPARATION

Heat 2 tablespoons of olive oil in a sauté pan. Sauté onion over medium heat until soft and translucent. Add garlic and cook for another minute or two. Season your onions and garlic with salt and pepper.

If using kale, add your chopped and washed kale now. Cook kale for 5 minutes or until soft.

Meanwhile, dice tofu being careful to save the sauce. Add your tofu and sauce to the pan.

Add 1 can of whole coconut milk and 2 tablespoons of maple syrup. Let curry sauce come to a simmer and reduce, at least 5 minutes or until everything is heated through.

If using spinach, add your spinach now so it melts into the curry

Serve over rice and enjoy!
