Cabbage Medley

INGREDIENTS
1 head of cabbage
2 large links andouille sausage
1/2 green, yellow, orange, and red bell pepper, thinly sliced
5 cloves garlic, minced
1/4 yellow onion, thinly sliced
1 teaspoon Creole seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon black pepper
Olive oil
PREPARATION
- Peel off the first tough cabbage leaves, if needed. Cut the cabbage in half, then cut halves in small batches into wide 1-inch squares.
- Slice the sausage into thick 1-inch slices.
- Add oil to frying pan and throw sausage in. Cook the sausage about 85% then remove from pan and set aside.
- Using the same pan and oil, add the cabbage and peppers with the garlic and onion. Sauté the cabbage and peppers until almost done, then add the sausage back to the pan.
- Mix well and add in the spices.
- Add about 1/2 cup water, then cover with a lid and cook for about 5-8 minutes. Season to taste.
- Serve.
