Apricot Turmeric Agua Fresca

2 cups of apricots, pitted and roughly chopped
¾ cup maple syrup
1 cup lime juice
1 teaspoon turmeric
2 cups filtered water
Ice cubes, to serve
4 sprigs of mint, to garnish (optional)
Combine apricots, maple syrup, lime juice, turmeric and water in a blender. Adjust maple syrup sweetness levels to taste. To serve, pour over ice and garnish with a sprig of mint.
