Winter Citrus Greens Salad

Serves 4-6
INGREDIENTS
Citrus Vinaigrette
¼ cup olive oil extra virgin
2 tablespoons orange juice
2 tablespoons lemon juice
2 tablespoons apple cider vinegar
2 tablespoons raw honey or maple syrup
1 teaspoon salt
¼ teaspoon fresh ground black pepper
Homemade Garlic Croutons
1 Acme baguette loaf (day-old preferred)
2 tablespoons olive oil
2 tablespoons garlic salt
2 tablespoons Italian seasoning
Salad
2 cups arugula
2 cups kale, torn into bite-sized pieces
PREPARATION
- To make the vinaigrette: In a small mason jar, combine the oil, orange juice, lemon juice, vinegar, honey, salt, and pepper.
- Place the lid on the jar. Shake the jar vigorously until the salad dressing ingredients are well combined.
- To make the croutons: Cut up baguette or bread of choice into bite-sized squares.
- Add the bread, oil, salt, and Italian seasoning to mixing bowl and toss until bread is coated.
- Place in oven on 350°F for 10 minutes or add to skillet and sauté until crispy. (Croutons can be stored in a resealable plastic bag for up to 2 weeks.)
- To assemble the salad: Drizzle the vinaigrette over the greens, add the croutons, and enjoy.
