Stone Fruit and Cucumber Salad

Keep it simple with this fresh summer salad and let peak-season produce shine!

INGREDIENTS

2 peaches
2 nectarines
4 plums
4 to 5 cucumbers
8 to 10 basil leaves
Flaky sea salt and freshly ground pepper
Extra virgin olive oil

PREPARATION

  1. Choose stone fruit that is firm but has a little give when you squeeze it.
  2. Cut around the pit and slice the fruit into thin slices.
  3. Cut cucumbers on the bias into thin slices.
  4. Arrange the fruit and cucumber in alternating layers on a serving platter.
  5. Tear the basil leaves and scatter over the top.
  6. Sprinkle with salt and pepper and drizzle with your best olive oil.
