If you thought you knew how mushrooms grow, think again. “Most people have a romantic notion that we have fields of mushrooms,” says John Garrone of Far West Fungi with a laugh. On a recent CUESA farm tour to Far West’s facility in Moss Landing, many of our tour-goers were surprised to learn that Far West’s organic specialty mushrooms grow in warehouses on sawdust bricks. Take a trip with us into the complex and magical world of gourmet fungus farming.
