In 2005, Veronica Salazar launched El Huarache Loco with support from La Cocina’s Food Business Incubator Program. In addition to huaraches (oval-shaped fried masa tortillas topped with beans, salsa, onions, cheese, and meat), their menu features a variety of classic dishes inspired by Veronica’s roots in Mexico City.
