Kaliva Morgan first started making the sauce because she hadn’t found a sauce with the flavor qualities similar to the sauces of Guinea, West Africa. At the time, she had been away from her home country for 20 years and still remembered the special balance of flavor and heat that Guinean sauces possessed. Making the sauce became a therapeutic process. This kind of evolutionary change is what Evolution Hot Sauce is all about. Be sure to visit her booth at Pop-Ups on the Plaza: Fall Kickoff.
All demos take place in the Foodwise Classroom (under the tents in front of the Ferry Building) and are free to the public, with recipes and samples for all.
