Audrey Hitchcock, Ramini Mozzarella

Stop by the Foodwise Classroom for a cooking demo featuring the seasonal bounty of the Ferry Plaza Farmers Market.

Audrey Hitchcock is the owner and cheese maker at Ramini Mozzarella. Ramini Mozzarella was formed in 2010 with five water buffalo. Today, they have over 100 in Sonoma. They make mozzarella, burrata, stracciatella, and ricotta every week and only sell the freshest cheese possible. All of their cheese is artisan and hand-pulled. Their two mantras and guiding principles are “Pull, Don’t Push (operate from the position of invitation, not command, from working with buffalos to coworkers to customers) and “Feel the Harmony, See the Love, Hear the Planet, Rock the World.” You can find Ramini Mozzarella at the Ferry Plaza Farmers Market on Saturdays.

All demos take place in the Foodwise Classroom (under the tents in front of the Ferry Building) and are free to the public, with recipes and samples for all.
