
That’s My Jam Cocktail

This recipe was made at CUESA’s Fifth Annual Summer Celebration on June 14, 2015.
Sesame syrup is made by roasting white sesame seeds, and then adding simple syrup and letting it simmer to absorb the flavor.
Makes 1 drink
INGREDIENTS
Sesame Syrup
2 cups white sesame seeds
4 cups sugar
1½ ounces No. 209 Gin
½ ounce fresh lemon juice
½ ounce sesame syrup
1 tablespoon plum jam
2 dashes old fashion bitters
Lemon peel for garnish
PREPARATION
To make the sesame syrup: Toast the sesame seeds in a dry pot. Add 2 liters of water and then the sugar. Dissolve the sugar and let simmer on low, 15 to 20 minutes, allowing the flavor to mix and some evaporation.
To make the drink: Shake the gin, lemon juice, ½ ounce of the sesame syrup, jam, and butters in a cocktail shaker with ice until cold. Double-strain into a large coupe glass. Garnish with lemon peel.
