William Werner, Craftsman and Wolves, featuring Yerena Farms

Stop by the CUESA Classroom for a cooking demo featuring the seasonal bounty of the Ferry Plaza Farmers Market. This demo will highlight a farmer-chef relationship forged and sustained at the farmers market, featuring Yerena Farms.
Under the direction of Chef William Werner, a 2015 and 2016 finalist for the James Beard “Outstanding Baker” award, CAW offers an ever changing menu of breakfast pastries, cakes, breads, confections, confitures, desserts, and lunch seven days a week. The name is a nod to the craftsman and the numerous challenges that one faces when pursuing their craft. For William, Craftsman and Wolves is the pursuit of twenty years’ experience in restaurants and hotels on both the East and West Coast during which he has refined techniques for pastry and chocolate work, honed in on his presentation style, and expanded his palette of flavors.
After growing strawberries for Driscoll with their parents for 12 years, Apolinar and Gilberto of Yerena Farms decided to lease their own farm. They began in 1982 growing conventionally, but in response to market demand converted five trial acres to organic. The organic fruit sold so well they eventually decided to transition the farm to organic.
All demos take place in the CUESA Classroom (under the white tents in front of the Ferry Building) and are free to the public, with recipes and samples for all.
