A California native, Executive Chef Reylon Agustin has been instrumental in establishing Madera as one of the leading culinary destinations in the Bay Area. Agustin draws inspiration from the region’s bountiful fresh produce and artisanal products and previously served as Rosewood Sand Hill’s Executive Sous Chef.
With a career spanning the U.S and U.K, Chef Agustin has held leadership positions as several acclaimed restaurants, including Executive Chef of Presidio Foods in San Francisco with Traci Des Jardins, Executive Sous Chef at The Ritz Carlton, Fort Lauderdale, and Chef de Partie at Restaurant Gordon Ramsay in London. Agustin is a graduate of the California Culinary Academy.
Owned and operated by the Torosians for the last 50 years, Tory Farms is a treasured family asset owing to its scenic beauty, rural feel, and abundant wildlife. Egrets, red-tailed hawks, white-shouldered kites, barn owls, and doves are among the many bird species that inhabit their fields, vineyards, and orchards. California quails and pheasants nest in 30 acres of uncultivated open ground. The Torosians refer to their farm as “The Magic Ranch,” and they believe that great tasting, wholesome produce can only be grown on a happy and healthy farm.
In 1994, Marty and Janet of Allstar Organics began growing heirloom tomatoes organically on 1.5 acres at their home in Lagunitas. They have since diversified and expanded, adding crops, varieties, and value-added products. An all-weather farm with distinct seasons and a highly mineralized, clay-based soil, Allstar uses a diverse cover-cropping system, microbiological drenches, and aged nutritional mulches. They grow over 100 varieties of 10 primary crops on the Lafranchi family dairy and cheese factory in Nicasio. The land is permanently protected by a Marin Agricultural Land Trust conservation easement. Janet is active in farming issues and is a Marin Organic board member.
All demos take place in the CUESA Classroom (under the white tents in front of the Ferry Building) and are free to the public, with recipes and samples for all.
