Peak Summer Baking Demo with Raquel Goldman of Norte 54 and the Chronicle's Janelle Bitker

Chronicle writer Janelle Bitker hosts a video chat and demo with baker Raquel Goldman of Norte 54, in partnership with CUESA. Raquel showed us how to make a Mexican-inspired galette using stone fruit from the farmers market and answer your baking questions.
Norte 54 offers modern Mexican baked goods focusing on traditional pan dulce, using seasonal produce and local organic ingredients. Born in Mexico, Raquel Goldman moved to Miami at the age of five, but Mexico remained a formative part of her childhood as she returned every summer to visit her grandmother. After studying art in college and starting a family in the States, she enrolled in San Francisco Cooking School, which led to an externship and later a job at the restaurant Nopa. In 2020, she started Norte 54 as a pastry box delivery program, while popping up at farmers markets with a rotating menu of pan dulce, such as cochas, novias, and more.
