Demo and Hands-on Oyster Shucking with Hog Island Oyster Company

Stop by the CUESA Classroom for a cooking demo featuring the seasonal bounty of the Ferry Plaza Farmers Market, featuring one of our market sellers.

There are many ways that people open oysters to get to the good stuff inside. Joe will show us how to shuck in a way that keeps the meat intact and presents the oyster perfectly, ready to slurp straight from the shell, and then you can try it for yourself!

The founders of Hog Island Oyster Co started out with the aim of cultivating the highest quality oysters possible, and that is still the driving principle behind their business. Good things grow slowly and that is what they have tried to do, developing sustainable aquaculture techniques to produce superior shellfish that taste wonderful while building a community of like-minded people. They take  great care in everything they do, from cultivating oysters through the ways in which they work with our environment and, finally, how they present their product. They call it their “Bay to Bar” philosophy – every step is important and they want to ensure that they always meet the high standards they set for themselves.

All demos take place in the CUESA Classroom (under the tents in front of the Ferry Building) and are free to the public, with recipes and samples for all.
