Aaron Rocchino, The Local Butcher Shop

Join us at CUESA’s Jack London Square Farmers Market in Oakland  for a Market to Table Cooking Demonstration with Aaron Rocchino of The Local Butcher Shop featuring the seasonal bounty of the Jack London Square Farmers Market.

During his senior year of high school in Pennsylvania, Aaron Rocchino won a national cooking competition in Florida. The prize was a full scholarship to attend The Culinary Institute of America in Hyde Park, New York. While attending culinary school, Aaron had the opportunity to intern at Oliveto in Oakland, California. Under the leadership of Paul Bertolli and Paul Canales, Aaron developed his true cooking style and learned how to butcher whole animals and craft salumi, pate, and pasta by hand. He began to understand what it means to cook “nose to tail” as well as how a restaurant could fit into a larger community of farmers and producers. He also met his wife, Monica, at Oliveto!

Aaron then spent a four year stint in the kitchen of Chez Panisse before he and Monica opened The Local Butcher Shop in 2011. Located in Berkeley’s Gourmet Ghetto, The Local Butcher Shop is dedicated to seasonal, locally-sourced, sustainably-raised, fresh meat. The Local Butcher Shop practices whole animal butchery, buying animals directly from local farmers and ranchers located within 150 miles of its shop. 

All demos take place at the CUESA Classroom (in the Palm Plaza at Embarcadero West and Webster Street, adjacent to the Info Booth) and are free and open to the public, with samples and recipes for all.
